Ritz Chicken

This recipe is by far one of our familys favorite. Our friends Bruce and Tamara gave us this recipe and we use it at least once a month!!!!!!
4 chicken breasts-cooked and diced
1 1/2 rolls ritz crackers
1/2 cup melted margarine
1/2 cup melted margarine
2 cans cream of chicken soup
1 Tblsp. poppy seeds
12 oz. sour cream
1 1/2 cup uncooked rice

Cook rice, put in bottom of 9X13 baking pan. Mix chicken, 1/2 cup melted margarine, chicken soup, and sour cream. Pour over rice. Crush and mix together ritz, 1/2 cup margarine and poppy seeds. Sprinkle over casserole.
Bake for 30 min. @350

We have been making this for years. Last month my friends made it for us and it tasted even better than mine does. I asked her what she does differently and she told me that she does one can of cream of mushroom and one can cream of chicken. Now I make it that way, and it is so yummy!

Can't remember how I stumbled on to your blog - but this recipe sounds delicious - will definitely have to give it a try!
